cookie-dough-titleI blame Ben and Jerry for my obsession with raw choc chip cookie dough. I think I have consoled myself on many past occasion with a tub of their cookie dough ice cream (I have a very clear memory of indulging in it after a disastrous math exam at school – triangles and I were not friends!). But thankfully I now have a better alternative!

Needless to say eating all that refined sugar and artificial stuff is not a great to do often, but in true super naturally healthy style, I love to eat treats and cake often. So much so I spend time lying in bed thinking about how to create a grain free, refined sugar free and dairy free cookie dough option. Sad but true.

And note the surprising and secret ingredient is that of chick peas! Yes you heard me, good old fashion chick peas make this a lovely ‘dough’ but also give it a firm texture and that perfect beige colour you would get from flour and butter.

Again these are pretty simple to make – blend, shape, allow to set in fridge/freezer. They are full of good fats and proteins and go perfectly with a cup of tea. I gave one to my mum the other day and she was astounded (I don’t think she would have eaten one if I told her what was in it first) that they were made from mostly chick peas so don’t worry it won’t taste like hummus!

Chocolate Chip Cookie Dough Bites

Gooey but healthy cookie dough balls that are full of protein and have a surprising ingredient...
Servings 10 portions

Ingredients
  

  • 200 g chick peas
  • 9 medjool dates
  • 1 tbsp vanilla essence
  • 3-4 tbsp raw honey75g choc chip or chopped raw dark chocolate 85%
  • 1 tbsp maple syrup
  • pinch salt
  • 60 g creamed coconut
  • 3 tbsp scoops coconut oil when solid

Instructions
 

  • In a food processor blend all the ingredient except chocolate chips, until smooth. Taste and add more sweetness if desired.
  • Then add chocolate chips and stir in until evenly mixed in.
  • Using a spoon take tbsp amounts and shape into balls type shape and place on a tray covered in grease proof paper.
  • Place in freezer until hard (about 30-45 mins) then store in air tight container in fridge.

Notes

Feel free to make these any shape you like or so to make them sweeter.
Don't be put off by the smell of chick peas when you are processing it - it won't taste like them.
