Seasonal Cucumber, Strawberry & Mint Salad (aka Wimbledon Salad)

wimbledonNot a salad fan ? Cant bear another iceberg lettuce bowl with your burger? Summer is too short for crap salad (especially in Scotland) so here is a one with no lettuce in sight.

This salad rocks. Its is Andy Murray in a bowl, Wimbledon on a fork. It brings together of this seasons most beloved offerings.

Thankfully you don’t need to eat salads everyday in order to be slim and healthy but when the sun is shining why the heck not! I do no profess to be a massive salad fan but I do love a good salad bowl my my legs are out and the thermals are off. Plus I am looking to move to eat in a more seasonal way and this is a great example of that.IMG_1093

Cucumbers and strawberries are currently in season which means you can knock this salad up even on the tiniest of budgets. It stores well and is a gem to take in a packed lunch for work/picnics. Its full of vitamin c, will help keep you hydrated, is a brilliant source of silica which with help keep all your joints healthy and will make your tummy bloat – less and super happy!

As an added bonus it take about 4 minutes to make.

Cucumber, Strawberry & Mint Salad

Ingredients
  

  • 1 cucumber with seeds removed
  • 8 strawberries
  • 8 mint leaves finely chopped
  • pinch of salt and pepper
  • Dressing
  • 1 tbsp raw apple cider vinegar
  • 2 tbsp balsamic vinegar
  • 3 tbsp cold pressed olive oil

Instructions
 

  • Chop all the vegetables and mint and combine in a bowl. Mix all the dressing ingredients together thoroughly then pour over the salad.
  • Serve as a side salad with fish or on its own

Notes

This taste great with additional avocado, walnuts or boiled eggs
